I’ve blogged countless times about this wonderful Curried Cauliflower Soup recipe from SeriousEats.com. It tastes great, is easy to make and requires very few ingredients.
We had a cauliflower in the fridge that needed to be used up so last night was the perfect opportunity to make another batch of soup.
I always double the ingredients so that we have left over’s for our lunches. (This ingredient list is for a double batch.)

1. Preheat oven to 450°F.
2. Spread cauliflower florets on a baking sheet, drizzle with 1 tablespoon oil and sprinkle with salt and pepper. Toss to coat. Roast until florets are browned, about 25 to 30 minutes, flipping once halfway through.
3. In a small stockpot, heat 1/2 tablespoon of oil over medium heat. Add onions and sauté until they turn brown (but are not caramelized).
4. Stir in curry powder and cook until fragrant, 1 to 2 minutes.
5. Add chicken stock, water, and cauliflower. Cover and bring to boil and then simmer until cauliflower is soft, about 5 minutes.
6. Purée the soup with a stand or immersion blender until smooth.
7. Return to pot if using a stand blender, reheat if necessary. Add salt, pepper, and cayenne (if using) to taste.
Since I already had the oven on I also whipped up a batch of cheddar biscuits. I made a huge pan of minis. Aren’t they cute? 🙂 I doubled the ingredients listed in this recipe too.
Dinner was pretty spectacular I must say. A big bowl of soup served with a dollop of greek yogurt & a drizzle of honey. De-lish!
Plus a large biscuit. (I made two bigger ones along with the minis) These guys were good. Recipe is now saved in my huge binder. 🙂
I popped open this can of all natural Root Beer and had about half. Found in the natural food section at Superstore for those wondering. It is free of HFCS. 🙂
