Good Morning Everyone! I woke up before the alarm this morning. Weird to have all kinds of energy at 5am. 😉 Must have been all that exercise before bed last night.
Ever since I mentioned cheesy scrambled eggs I’ve wanted them so….
For the two of us I combined the following in a non-stick pan:
- 2 eggs
- 4 egg whites
- 20g old cheddar cheese
- 2 tbsp green onions
- garlic powder
- pepper
All wrapped up in a whole wheat tortilla. Obviously it’s a bit overstuffed. Opps. 🙂
With a side of greek yogurt & blueberries.
We had a little bit of company with our meal. Hehe!
So, how am I finding this veggie challenge so far? An absolute breeze. Honestly, I don’t really notice the lack of meat when I’ve got the right combo of carbs & protein to keep me full and satisfied.
For those participating, how are you finding it?

As mentioned above, I did get in some “me time” on the elliptical last night. Only 30 minutes but it’s still better than nothing! I slept like a baby last night too. Oh and FYI, I’m loving Secret Diary of a Call Girl. We watched the first two episodes while I worked out and now I’m kind of “hooked.” hehe I know, lame! ;-P
I’ve got group hill training scheduled for tonight but it’s also supposed to rain so depending on the weather I may opt out and go to the gym instead. I’ve never done hill training on a treadmill so might give that a shot.
