Apple Cake with Caramel Sauce

Fall starts tomorrow. This time of year always makes me think of falling leaves, turkey and APPLES! Living near the Annapolis Valley, it’s a tradition to head there and stock up on lots and lots of apples for baking.

So I thought I’d share with you a recipe that is a favourite in our family. My mom makes it best but even I can pull it off if needed.

The sauce makes the recipe! It has a caramel like taste and is the perfect sweetness to compliment the cake. Here you go. We always make it for Thanksgiving but it’s great all year ’round! Enjoy!

Apple Cake
  1. 4 cups of shredded apples
  2. 2 cups of sugar
  3. 2 cups of flour
  4. 1 & 1/2 tsp. of baking soda
  5. 2 tsp. of cinnamon
  6. 1 tsp. of salt
  7. 2 eggs
  8. 3/4 cup of vegetable oil
  9. 2 tsp. of vanilla
Sauce
  1. 1 cup of brown sugar
  2. 1/2 cup of margarine
  3. 1/2 cup of evaported milk (Carnation)
  4. 1 tsp. of vanilla
For the cake
  1. Preheat oven to 350 degrees. Grease a 9 x 13 pan. Stir together apples and sugar. Add dry ingredients. Stir well. In a separate bowl, beat eggs, oil and vanilla. Stir into apple mixture. Blend well. Bake for 50 minutes or until cake springs back.
For the sauce
  1. Place all ingredients into a saucepan and stir. Bring to a boil over medium heat. Cook for three minutes, stirring often. Serve warm over cake.
