Bacon & Cheese Savoury Waffles

After seeing Jaime’s delicious looking savoury waffles, I knew that I wanted some. ASAP! I attempted to make them somewhat healthy and am pretty pleased with the results.

The waffle batter was made from:

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 egg
  • 1 cup 1% milk
  • 1 tsp olive oil
  • 1 1/2 tbsp bacon bits
  • 2 tbsp chopped green onions
  • 1/4 cup shredded cheddar cheese, I actually used Tex Mex
  • 1 tbsp shredded parmesan cheese

Combine dry ingredients first, then add in wet ingredients.  Add in the cheese, onions & bacon at the end, mix welling.  Cook in waffle maker as usual.

Makes 8 Waffles.

1 Waffle = 2 WWs Points
2 Waffles = 3.5 WWs Points
3 Waffles = 5.5 WWs Points
4 Waffles = 7.5 WWs Points

It’s our last day of vacay already.  The holiday weekend flew by so quickly, but I did have lots fun cooking, waiting out a hurricane, enjoying my first pumpkin spice latte of the season, exploring our beautiful province and more.  If you’re just catching up, here are the links:

Now I must talk about my eats and the Shred Challenge:
Remember the unbearable heat & humidity last week?  Well, by Thursday evening everything had sort of gone to hell…

I’m back to tracking today though.   I had gotten into a lovely routine and letting a few high calorie days ruin 3 weeks of hard work would just be silly. Plus, I was starting to feel gross from the junky food.   🙂 

I don’t know what to do about the Shred Challenge though, it was just to hot.  Honestly.  Maybe I’ll just try to focus on being active daily and start Shred in October.  Thoughts?
