Bacon & Eggs For Breakkie

This morning I wanted something a little different than my usual oats, scrambled eggs etc.  So I quickly crisped up some turkey bacon along with a couple of eggs.


Popped a slice of Silver Hill’s Wheat Free Chia Bread in the toaster.  I picked the bread up at Planet Organic last week and this was the first opportunity I’ve had to try it out.

Topped with sliced tomatoes. Not bad.  Next time I will toast it a bit longer though.

Mmm mmm! 

Served with juicy orange slices. Delish!  The whole meal was 6 points – turkey bacon (2), egg (2), toast (1) and orange (1)

Overall my day was okay.  It was hot and my AC is on the fritz. :(    However, my house is much cooler so it’s all good.  I’m catching up on a few episodes of Days and then have big plans to mow the lawn and start a new book.  I just finished American Wife and it was such a great read, really enjoyed it a lot. FYI. ;) 

Up next on the list is a book recommended to me by a reader – The Bite of the Mango by Mariatu Kamara

In this gripping and heartbreaking true story, Mariatu shares with readers the details of the brutal attack, its aftermath and her eventual arrival in Toronto. There she began to pull together the pieces of her broken life with courage, astonishing resilience and hope.

I also borrowed The Eat Clean Diet Cookbook.  Looking forward to saving some healthy and delicious recipes for future use. 🙂
