I’ve been trying lately to get back on track with eating more fruits and vegetable, and I’ve read that you absorb nutrients better when food is blended. I’ve been wanting to try this recipe for quite some time now, as I frequently read Kimberly Snyder’s blog and I’ve read all the benefits of this Glowing Green Smoothie countless times.

I’ve been trying lately to get back on track with eating more fruits and vegetable, and I’ve read that you absorb nutrients better when food is blended. I’ve been wanting to try this recipe for quite some time now, as I frequently read Kimberly Snyder’s blog and I’ve read all the benefits of this Glowing Green Smoothie countless times. I will admit that I had my reservations in trying something that looked like nuclear waste and contained SO much spinach. However, I am happy to report that I can honestly say that I was pleasantly surprised by the taste of this oh-so-good-for-you smoothie. It’s actually very refreshingly sweet! I promise.

I made this recipe while visiting family in Cape Breton, and we all tried it and loved it! I think you could even get kids to drink it because it’s such a bright fun color! We were calling it “the hulk smoothie”. I might be the only one who gets this excited about things that are good for you.

I tried this recipe two weekends ago while I was battling a cold, and I was trying to flush it out of my system. Honestly it worked, I downed this smoothie 3 days in a row, and my cold vanished with out a trace!

I don’t bother to peel or core the apple and pear, as I read that it actually helps create a better texture while adding additional fiber. We should be getting 25 grams of fiber a day! Now who doesn’t need more fiber?

I made a double batch, and froze the remainder in individual mason jars for grab and go availability!

The GGS will stay fresh in the fridge for 2-3 days as long as it’s covered. I bought a set of mason jars, and decided that freezing them would be easier. Just remember to leave a little space at the top of the jar otherwise they will explode from pressure, and you’ll be cleaning up green gook from your freezer for days!

Ingredients (64 ounces / 2-4 servings)

  • 1 ½- 2 cups very cold, filtered water
  • 6 cups spinach, chopped
  • 5 cups organic romaine lettuce, chopped
  • 2 stalks of organic celery
  • 1 organic apple, cored and chopped
  • 1 organic pear, cored and chopped
  • 1 organic banana
  • 1–2 Tbs. fresh organic lemon juice

Optional Ingredients

  • Ice cubes (the extra coldness can help newbies with the taste)
  • 1/2 cup of organic cilantro
  • 1/2 cup of organic parsley

Directions 

Start with some of the water, and slowly add spinach and chopped romaine to the blender. Press the liquify button.
Gradually move to higher speeds and add the herbs (optional), celery, pear, and apple. Add the banana and lemon juice last.
*For 1 serving, simply cut out one of the fruits and the celery.

I didn’t use cilantro or parsley this time around, but I just bought a new cilantro plant, and I plan on adding it next time for sure.
