Good Evening Bloggies, hope all is well with everyone!
What a week this has been. The weather has been nuts – torrential downpours one day and disgustingly humid and sunny the next. Makes me want to stay inside until the Summer is over. Can’t wait til September is here, it’s my fav month and always gorgeous! We tentatively have a long weekend getaway to PEI planned and it’s going to be wonderful and way cheaper then going to Old Orchard Beach – as previously talked about. I still would like to tour New England but not until after we’ve paid down the needless debt. Yes, we’re still sticking to our budget… mostly, the Rebel was an exception of course!. 😉 In all honestly, it’s going quite well and I’m pleased with our progress. But that is for another post.
I got the August issue of Chatelaine in the mail yesterday and decide to try out one of the recipes for Supper tonight.
Green Salad With Bacon & Dates
I modified the quantities a bit since it was just the two of us.
- 4 strips bacon
- 1/4 cup orange juice
- 2 tsp white wine vinegar
- 1/4 tsp sugar
- 1.5 tbsp olive oil
- 6 dates
- 4 cups mixed greens <—fresh from our garden!
1. Cook bacon in a large frying pan over medium, until crisp, about 10 min. Pat with paper towels, then coarsely crumble.
2. Whisk orange juice with vinegar and sugar. Whisk in oil.
3. Chop dates, then toss with bacon and lettuce and greens. Just before serving, drizzle with dressing and toss to mix.

I thought it turned out really well, tasted great and was really filling. I topped mine with some creamy goat cheese too. Delish!! The salad, including goat’s cheese worked out to 400 calories.
Along with a crusty chunk of ciabatta bread. Mmm mmm, this was the perfect Summer meal. I barely had to turn the stove on!

The Fresh Roast Coffee is my favourite. A well balance dark roast, sweet& clean with a touch of spice. I’ve actually become quite the coffee snob because this stuff is just that good! 😉
