2 cups Egg Whites
½ cup Cottage Cheese (1%)
½ cup chopped tomato (or No Added Salt canned)
½ cup chopped green pepper
½ cup chopped sweet onion
½ can Black Beans (rinsed & well drained)
8 Whole Wheat Tortilla wraps (small)
Pepper/Salt to taste
- Preheat oven to 250F. Place tortillas (wrapped in tinfoil) in oven to warm while preparing remaining ingredients.
- In a small bowl, whisk egg whites, cottage cheese, salt and pepper.
- In a medium skillet coated with cooking spray, sauté vegetables and beans until soft. Pour the egg/cottage cheese mixture sets. Once firm, divide the egg mixture among the warmed tortillas. Roll each into a burrito. Garnish with salsa.
