Channelling My Inner Julia

I finally started reading Julie & Julia this week;  only made it a few pages before I was was inspired to cook!

The first recipe Julie made from Mastering the Art of French Cooking was the Potage Parmentier.  I found several links to this recipe online, and after tasting the results, can’t wait to pick up the cookbook!  Maybe I’ll attempt to make all 500+ recipes in a year too! 😉

Leek and potato soup smells good, tastes good, and is simplicity itself to make.

What really got me was the ingredients.  Or rather lack of ingredients – potatoes, leeks, water, salt, butter or cream.  Yes, that it is.

I haven’t done a lot of cooking with leeks.  They’re like giant green onions.

I had to commit a huge faux pas though.  There was no way that hubby would eat the soup with slimey slices of leeks.  So I gave it a whirl in the blender. Apparently the original recipe specifically states not to do this or the soup consistency would be more like that of baby food.

Aww well, I think it turned out pretty freaking good!!

I could’ve ate the whole pot tonight.  Seriously, I had to stick the leftovers in the fridge before they were cool because I kept going back for tastes.

According to my recipe calculations, 1/4 of the huge pot of soup is only 250 calories.
