Double Chocolate Coffee Cookies

In order to raise money for our costumes for the “Dal Dance Year End Recital” we’ve decided to have a bake sale. Below is my contribution to the bake sale, conveniently packaged in little Valentine’s day inspired bags these cookies are good to go. We’re hoping for a good turn out (pun intended) so I made them extra big and I made a lot. 

Double Chocolate Coffee Cookies

| Recipe |

1/3 cup instant coffee granules
2 tablespoons hot water

1 cup of apple sauce

3/4 cup of brown sugar 

1/2 cup of white sugar (Splenda also works here)

2 eggs

1 1/2 tsp of vanilla extract

2 1/4 cups flour

1/2 cup of unsweetened cocoa powder

1 tsp baking soda

1/2 tsp salt 

1 bag of semi-sweet chocolate chips

1/2 cup of unsweetened coconut 

Dissolve coffee into hot water. In a separate bowl combine dry ingredients excluding the chocolate chips. In a large mixing bowl beat together apple sauce and sugars, then mix in eggs, vanilla and add coffee. Slowly add your dry ingredients into the wet mixture adding chocolate chips at the end. 

If you can refrigerate your batter for up to an hour before baking. 

Drop combined ingredients by the tablespoon onto baking sheet lined with parchment paper, and bake on 350 for 10-12 minutes.
