Easy Shrimp Pasta

I do want to take a moment to express my sincere thanks for the comments, messages and emails that you all sent me regarding my Disordered Eating post.   To hear your struggles and know that I’m not alone really helps.   It was a hard thing to admit but after reading all your messages it was 100% worth it.

Now, back to the regular scheduled blogging….

Another one of my favourite go-to recipes.  Easy Shrimp Pasta For Two, compliments of Kraft Kitchens.  Simple, tasty and relatively healthy.  What more could you ask for?

I make this dish several times a year.  This batch was particularly good as I used my Williams Sonoma Balsamic Vinegar and fresh garlic instead of Kraft’s Balsamic Dressing to marinate the shrimpies.  Yum!

   

This is one of those meals that looks fancy but only takes 20 mins to prepare. :) 


Served up with evoo roasted brussel sprouts.   The whole dish comes in at 9 points (approx 450 calories) Mmm mmm, fantastic Dinner!

Lookie what I found on my doorstep this afternoon:

I won a Chia Seed giveaway ages ago and was really surprised to receive two big packages!  Awesome!  I just ran out a few weeks ago so this should hold me over for the next several months.  Thanks Bob’s Red Mill!! 

That was the highlight of my day. :)  Haha, but seriously, life has been low key and I’m really enjoying it.  Lots of tv time with the hubby and snuggles with my kitties.  Oh, and speaking of tv, we’ve recently started watching the show Californication and I’m already addicted.  I don’t think SHO or HBO make a show that I don’t enjoy.

I’ve got a run date scheduled for tomorrow night with Mel.  Figured it was time to get my butt in gear.  We haven’t set a distance, we’re just going to hit the pavement and see where it takes us.  Seems like a good plan to me, after all, running is supposed to be fun.

Nothing else to report.  I rather enjoy being boring because it means that I’m not running around like a chicken with it’s head chopped off!
