Fall Baking

It was was your typical Fall day here – rainy and grey.  The house was cold when I woke up and immediately I thought, what a perfect day for baking!

I admit, it may have gotten a little out of hand. 😉

I tried out the Pumpkin Spice Biscotti recipe from the new Chatelaine magazine.  They turned out fantastic!  I made one minor substitution – I used pecans instead of pumpkin seeds because I thought it would make them that much better. 😉 Oh and I sliced mine thinner than in the recipe so I actually got 54 servings instead of 40.

These work out to 1 WWs point each.  The recipe is a definite keeper!

Up next, cookies! 

I wanted to make oatmeal raisin for me and then I decided to whip up hubby a batch too.

I finally got to use the cooking bible!! I picked up this huge ass cook book full of healthy recipes last summer, but there were so many recipes that it was just overwhelming and I never tried anything. *blushes*

This morning I opened up to the index and found a recipe for Oat Raisin Cookies.   This recipe was a little different than most oatmeal raisin recipes.  There sesame seeds and no cinnamon.  I haven’t tried one yet, but they look delish!

Chocolate Chip Cookies for the hubby.  Same un-healthy recipe that I’ve been using for years except that these were made with whole wheat flour. 😉

And, last but not least, Peanut Butter Muffins from Kraft What’s Cooking magazine. 

Okay, not exactly all their recipe… I decided it would be fun to make PB & J muffins and included a little spoonful of raspberry jam in the center of each muffin. Oh, and I omitted one egg and used almond breeze instead of milk.

On top of all that baking, I made us a roast beef dinner with all the trimmings – mashed taters, roasted carrots, beans, yorkshire puddings & gravy. I’m officially sick of the kitchen! 😉

Pleased to say that I kept my eating in check again today, even with all those tasty baked goods.  I had a bite of hubby’s PB &J muffin and a couple biscotti and that was it! 

We just got in from a very misty stroll and now I’m about to get our lunches and my gym bag together.   Excited to catch up with all of you later tonight.

PS.  Since I got MariLynn, I’ve occasionally been posting pictures on here that aren’t really relevant to healthy living so I decided to create a separate photography blog for those pictures. For those interested – I’ll try and make note in future blog posts when I’ve uploaded pics to the photo blog though. I would love all your feedback!
