What a gross, grey, rainy day here in NS. Weather forecast isn`t looking good for tomorrow either so we`ve postponed the Cape Split Hike. Instead, hubby and I now have plans to install our new flooring and scrap the trim on our house. Rumor has it that my garden may also become a reality too. 🙂 We shall see!
On the menu ce soir…..fancy eggs. An asparagus & swiss cheese omelette.
With a side of crusty ciabatta. Mmm I love good bread!
Omelette was made with 1 egg, 3 egg whites, splash of milk, fresh pepper & garlic powder. Topped with caramelized shallots, asparagus & an ounce of swiss cheese.
Rewinding back to lunch… a bowl of Blue Menu Pasta E Fagioli soup. I`m a huge fan of this stuff; it`s the perfect, hearty soup for a rainy day!
Plus a few left over pumpkin ravioli and a side of strawberries that have definitely seen better days.
