Very similar to Kimberly Snyder’s Glowing Green Smoothie recipe this recipe simply ditches the Romain lettuce for more spinach and kale (better for you greens), and adds mango! For me frozen mango creates a really great texture for smoothies, and it’s so sweet and high in iron! WOO! If you’re new to green smoothies you can always try adding 100% orange juice instead of water! Make these bad boys ahead of time and store in mason jars, and you have no excuses for eating an unhealthy breakfast again!
1- 1/2 cups of Coconut Water
6 heaping cups washed spinach or Kale (stems removed)
1 organic apple, cored and chopped
1 organic pear, cored and chopped
1 organic banana
fresh organic lemon juice
1 cup of frozen mango chunks, rinsed under cold water (helps to thaw slightly)
Almond milk as necessary
Starting with the water, and slowly adding the spinach and/or kale. Press the liquefy button until blended.
Gradually move to higher speeds and add the pear, apple (I leave on the skins), and mango. Add bananna and lemon juice last. I use plain almond milk usually near the end to help blend it all together and bring the liquid to the top of the blender to fill it. It also adds a nice creamy texture
This recipe should make a couple of servings. I tend to get three regular sized mason jars (like the ones below) out of it. I put one in the fridge for the next day, and I freeze two for work days ahead. I usually make these on Sunday night while I’m also washing all the spinach for salads. It just makes it easier to do it all at once
and then I make another batch of smoothies on Wednesday. Planning ahead makes sure that no matter how my morning goes I still have healthy breakfasts ready to go when I am, and I just take grab it from the fridge and take it with me. No excuses.
