Hello Weekend

The best part of the week has arrived.  Two days of doing whatever comes to mind without worrying about schedules.  I have some fun things planned including a trip to the Farmers Market tomorrow morning with Angie.  I bought minimal fruits & veggies when I went grocery shopping yesterday, totally holding out for the fresh, local stuff that tastes so much better!  Along with visiting Ang, we’re also celebrating Dean’s birthday with dinner at Il Mercato.  Should be a great weekend! 🙂  Do you have fun plans or are you just relaxing?

I feel like I’ve been more organized with my blogging lately.  I’ve been trying to post my Suppers during the week and on the weekends, aiming for two daily posts since they’re usually more eventful.  Seems to be working out for me. I can’t imagine working full time and doing 2-3 posts a day.

For Supper tonight I tried out the Cheesy Sweet Potato Crisps that have been making their way around blogland.  There are a few variations of the recipe, I used the one from How Sweet Eats.

  • 1 pound sweet potatoes, peeled
  • 2 egg whites
  • 1/2 cup romano cheese ( I used parm)
  • 1 teaspoon rosemary
  • 1/4 teaspoon pepper

One large sweet potato sure turns out to be a lot of shredded sweet potato. 😉  I used the food processor, no hand grater for this!

The most time consuming part of the recipe is squeezing all the moisture out of the potatoes.  Not sure how everyone else did it, but I put handfuls of the shreds in a piece of paper towel and squeezed until the paper towel was soaked.  Took A LOT more paper towel then I would have thought.

Mix in the egg whites, shredded parmesan cheese, rosemary & pepper.

Line baking sheet with parchment paper and form patties with a scoop of the mixture.   Bake at 425 degrees for 13-15 mins.

Topped with light sour cream and green onion.

These were good but there’s room for improvement on my end – I made them too thin and didn’t let them bake long enough.  I also took several pictures of my meal so by the time I ate them they weren’t very warm.  🙁   I really liked the taste though, so I’ll be experimenting until I’ve perfected them!  Has anyone tried cooking these in the frying pan with a little oil? Oh, and FYI – hubby approved!

Along with the crisps, I had a small whole wheat tortilla drizzled with mustard and stuffed with lean ham & spinach.
