I’m Hungry: Springtime Nests

These easy little nest eggs are one of our favourite Springtime treats to make with the kids.  They look adorable on a little cake stand or a brightly coloured plate.   Ingredients:   - 2 cups sugar  - 3 tbsp cocoa  - ½ cup milk  - 1 tsp vanilla  - 2/3 cup butter  - 3 cups rolled oats  - 1 cup coconut  - Mini eggs To Prepare: In a medium saucepan, combine sugar, cocoa and milk.   Let boil for 5½ minutes, stirring frequently. Remove from heat and add vanilla, butter, rolled oats, and coconut.  Let cool slightly then press into sides and bottom of mini-muffin baking tins to resemble a nest shape. Add three eggs to each nest.  Let cool completely to harden nests. Just in time for Easter.  Yum! ...
