This has long been a “go-to” recipe of ours when we’re in a hurry and have some extra tortillas on hand.
Ingredients:
10 (6-inch) flour tortillas (room temperature)
2 tbsp oil
2 cups broccoli pieces
1 cup mushrooms, sliced
1 cup chopped bell peppers
1/4 cup green onion, diced
1.5 cups cheddar cheese, grated
Dipping sauce such at sour cream, salsa or guacamole
To Prepare:
Heat oven t0 400 degrees. Heat oil over high heat in a large frying pan. Add vegetables and saute until tender (approx. 3-4 mins). Cool slightly. Add cheese and stir to combine.
Place about 1/3 cup of vegetable mixture along center of each tortilla and fold in half.
Arrange tortillas on cookie sheet and bake for 5-10 minutes for cheese to melt.
Serve with dipping sauce of your choice.
*You can always sub these veggies in with others you have on hand like corn, peas or zucchini.
