My First Harvest

Yup, today I was able to pick all kinds of leafy greens from my garden!  How excited was I?!  From this – Lettuce & Spinach

To this – all trimmed and ready to be gobbled up.  I can’t believe it worked and we’re eating fresh veggies from our back yard!  When we first put the garden in I was sort of afraid that nothing would grow but I was obviously wrong.  🙂

 
To this – DELISH salad!!! Talk about eating local!  Lettuce, spinach, tomatoes (local not from my garden though) mozza cheese and a handful of dried herbs.

 
My Mom stopped by for dinner…. that’s why we ate at the table. 😉

 
Along with the salad we had a simple beef stir fry.  Beef pieces mixed with black bean sauce,  plus snow peas, red peppers & onions. 

I had mine with rice pasta which I’m loving! I don’t think I’ll got back to regular spaghetti.  Hubby stuck with brown rice.

 
For dessert, some lovely banana softserve.  Man, I’m addicted to this stuff.  I haven’t had a single craving for ice cream since I started making this stuff.  That is HUGE for me.  As many of you know, I’m the ice cream queen. 🙂  If you haven’t tried this, do so NOW!! 

I’ve spent the afternoon/evening getting chores done – an hour weeding the garden, laundry, tidying and baking a batch of Orange Blueberry Muffins. I haven’t worked out the nutrition info for these guys yet but they shouldn’t be too bad, I’m guessing around 150 cals/muffin. Also note – they are dense but not overly sweet.


Simple ingredients used:

  • 1.5c spelt flour
  • 1c oats
  • 1tsp baking powder
  • 2tbsp chia seeds
  • 1/4c raw sugar
  • 3tbsp canola oil
  • 1/2c almond milk
  • 1/2c orange juice concentrate (I had this left over from the shrimp recipe)
  • 1/2c blueberries.

Bake at 375 degrees for 22 mins.

So my day was pretty stellar, stayed on plan again, this is 3 days in a row of eating well and tracking!  Burnt some serious calories weeding the garden, hung out with my Mom and put a good dent into my latest read – Best Friends Forever.  Hope you’re all doing well.
