No Bake Quinoa Cookies

Are you looking for something sweet that (a) doesn’t require turning on the oven, and (b) is actually not that bad for you? If you answered yes to either of these (and you should) you’re in luck!

NO BAKE CHOCOLATE QUINOA COOKIES

Adapted from this recipe.

INGREDIENTS
1/4 cup coconut oil
1/2 cup maple syrup
1/4 cup unsweetened cocoa powder
1/2 cup natural peanut butter
1/2 tsp vanilla extract
1/4 tsp kosher salt
3 cups cooked quinoa (from about 1 cup uncooked quinoa)
Chocolate chips for top (and added crunch)

INSTRUCTIONS 

Line a baking sheet with parchment paper and clear a space in your fridge or freezer for it. Set aside.

Combine coconut oil, maple syrup, and cocoa powder in a small saucepan.

Bring to a boil over medium heat, stirring to combine. Let boil for about one minute, then remove from heat. Stir in peanut butter, vanilla and salt.

Mix in quinoa. Make sure to taste test!

Drop batter in small scoops onto the parchment paper. 

Top with mini chocolate chips.

Place trays in fridge or freezer to set, which will take at least an hour.

The cookies are ready once they are completely firm. For best results, store in the fridge.
