Oatmeal Blueberry Spelt Pancakes

Good Afternoon Bloggies! Hope all is well with everyone. Thanks for the feedback on the new layout. I did notice a few glitches earlier this morning when I opened the blog in IE and Firefox (I use Google Chrome as my primary browser – it is awesome if you’re wondering!) but I think I fixed them. They mainly had to do with the nav bar color.

Anyways, I’ve re-named the blog – The Next Chapter. Why? Because I’m done with excuses and talking about making changes. I’m just going to shut up, do it and start the next chapter. There will be no long post about how I’ve fallen off track etc. From now own I’m believing in myself and striving to make the best choices for my health. That is it.

It was still really humid when I woke up this morning, looks like rain, which I’m crossing my fingers for. I putted around, got some For Dummies Rebel reading done and then decided to start breakkie.

Oatmeal Blueberry Spelt Pancakes. Pancakes are one of my fav breakfast foods and they don’t have to be unhealthy. I know most recipes call for eggs, sugar & butter but not these guys.

Ingredients:

  • 2/3 cup oats
  • 1/3 cup spelt flour
  • 1/3 cup blueberries
  • 1 egg
  • 1/3 cup UVAB (or other milk)
  • 1 tsp baking powder
  • dash of cinnamon

Cook over medium heat in non-stick pan for 2-3 mins on each side (until brown). Easy peasy.

I topped mine with SF Syrup. We’re all outta real maple. 🙁

The day hasn’t begun until I’ve had my mug of Just Us! 😉

And, since it was still gross and sticky, a lovely cool treat for “dessert”. Strawberry Banana Softserve. 2 frozen bananas, 4 strawberries & 1 tbsp UVAB. Whirl it up!

I’m loving this softserve. The calories are about the same as a 1/2 cup of froyo but it’s way better nutritionally! 🙂

I spent the rest of the morning working on our budget (a few amendments since hubby finally got a parking spot downtown!) taking pictures/reading and that’s pretty much it. Not a bad way to spend a lazy Saturday morning!

Lunch was leftovers – Spicy Pepper Shrimp. I re-heated it in the frying pan. I think it got even better sitting over night!

And, for fun a small glass of icy pink lemonade. Pitcher compliments of Jaime’s move. I can’t remember the last time I had lemonade, not as good as I remember though.

Plans for the rest of the day include cleaning, laundry and weeding the garden. I’d like to work out too even if its just for 30 mins.

Here’s one of my practice shots, it’s nothing spectacular – simply looks better then my old Point & Shot ones. I’m learning a lot from the For Dummies Book. I really wanted to get the blurred background effect with my food shots but even after adjusting the aperture, it’s not like other food bloggers’ pics. I’m guessing it has to be with my lens and that a 50mm will give me the desired effect.
