Ingredients
1 package boneless skinless chicken thighs
1 can coconut milk
3 TBS curry powder
1 TBS paprika powder
1 TBS garlic powder
1 TBS black pepper
1/2 TBS sea salt
4-6 carrots
1 zucchini
1 green pepper
1 red pepper
Directions
- In a small bowl mix all dry ingredients together
- Place chicken thighs in the slow cooker and pour the dry mixture over the chicken thighs and toss until the thighs are coated with the spices
- Pour the coconut milk over the chicken
- Cut up vegetables into strips or chunks and layer over the chicken thighs
- Cover and cook on low for 7-8 hours
