{recipe} Mediterranean Quinoa Salad

If you’ve hosted me at a potluck, or a BBQ chances are I brought this salad, and while I’ve blogged it before I’ve actually figured out how to make it even easier. It’s honestly foolproof, and can be thrown together in a pinch. If there’s anyone who can doctor up a store bought salad it’s me.

Literally, all you needs is a store bought Greek salad, some cooked quinoa, olive oil, and balsamic vinegar, and you are good to go my friends.  I wish I could tell you that I measure it, but I do not. I kind of just haphazardly toss everything in and hope for the best. Don’t worry though I’m going to guestimate so you don’t fub it up.
I like to add a few extra things (when I have them) like tamari almonds, walnuts (but when bringing to an event I keep them separate incase of allergies), avocados, and grilled chicken or shrimp.

MEDITERRANEAN QUINOA SALAD

Ingredients 

1 pre–made Greek salad
1 cup quinoa (doubles when cooked)
1/4 cup olive oil
Juice from half of a lemon
1-2 TBS balsamic vinegar
Salt and Pepper to taste 

Directions 

Cook quinoa according to instructions. I use a rice cooker because it’s just THAT easy!

Toss salad and quinoa together then add olive oil, balsamic vinegar, and lemon juice to combine. Season with salt and pepper.

This salad can be served warm or cold (totally up to you).

If adding avocado or nuts just be sure to add the end or just before serving, as the avocado will turn brown once the air gets at it, and the nuts lose their crunch. 
Yup it’s pretty much a joke of a recipe, but this my friends is no joke for your taste buds. It’s so good! Let me know if you try it by commenting below or hit me up on social media.
