Shortcut Recipes: Chocolate Paelo Cookie Dough Balls (low carb)

Not a Martha Stewart when it comes to baking? Fear not dearest blog reader because these no bake low carb paleo cookie dough balls are the perfect little treat when you are trying to stay on track, and also avoid turning on the oven.

If you are the type of person that could stand in front of the refrigerator eating an entire cookie dough log and not even think twice then this recipe is perfect you dearest cookie monster.
I should mention that for those of you who maintain a vegan diet these cookie dough balls could easily be veganized. Simply swap out the honey for maple syrup and opt for vegan chocolate chips, and you’ve got yourself a deliciously low carb vegan treat.  

I made some adjustments as I used coconut flour because I couldn’t find almond flour. I rationalized this choice because I figured coconut flour is plant based as well as gluten free, and so in my mind it should be fine (for those of you paleos out there please do correct me if I am wrong).  Now there is some debate about whether peanut butter is also paleo because peanuts become acidic in your body, and therefore it’s not the best option. If you have it opt for almond butter, as it does not become acidic in the body (we should be striving to alkaline our bodies). I did not have any almond butter left (doesn’t last long in my house), and so I used the next best thing I had on hand which was natural peanut butter. 

 
It should also be known blog reader, that I am not following nor planning in the near future on following a paleo diet, and so the restrictions don’t really apply to me hence my lax attitude with my adjustments. I do, however, like the idea of incorporating low carb treats into my diet which is what appealed to me in the first place about this recipe. 
 
I think next time I might sprinkle coconut on top, or add hemp hearts for some added crunch! We’ve already gone through this first batch since we made them last week, so I’ll let you know if I come up with any other delicious substitutions because I will 100% be making these again!
 
Chocolate Paleo Cookie Dough Balls

Ingredients
Cookie Dough
1/2 cup almond flour (I used coconut flour)
1/2 cup shredded coconut
1 tablespoon honey (could use maple syrup)
2 teaspoons vanilla 
1/2 dark chocolate chips
1 cup almond butter (used natural peanut butter)
1 tablespoon coconut oil (could use olive oil)
Coating
1/2 cup dark chocolate chips
1 tablespoon coconut oil, melted (could use olive oil)

Directions
Mix all wet ingredients together in a large bowl and set aside 
Combine all dry ingredients together.
Dissolve the dry ingredients into the wet until you get dough like consistency
 
Using your hands create round balls and place on parchment paper lined container (perferably one that will fit in your freezer). I used a tablespoon measure to scoop out the mixture the same as I do when I make cookies.  I like using the tablespoon measure because it helps create uniform cookies, but also makes it easier to form into balls. 
 

 
Allow cookie dough balls to freeze for 15 minutes
 
Just before the timer goes off for the cookie dough balls, place chocolate chips and coconut oil in the microwave for one minute, then stir until chocolate melts. 
 
Dip each of the balls in the melted chocolate with a toothpick to coat and put back in freezer for another 15 minutes. 
 
Enjoy!  
 
No matter how good our intentions we still all crave something sweet (I know I do) and so once in a while I think you need to give into these urges. Which is why I think it’s important to have little snacks like these on hand that you don’t have to feel guilty about. Because who wants to feel guilty? Certainly not me! There’s enough to feel guilty about and food should never be one of them.
