Sights of Summer

What is more Summer then barbeque, boiled corn, fresh greens and a fun drink? Last evening we celebrated Dean’s birthday with all of the above! 

For some reason I wasn’t in the mood for wine, I wanted a nice cold,  fruity drink so I picked up a couple bottles of Pomtini.  I was making POM mocktails for a while but who knew there was officially a Pomtini?  Not me!   I’m not a big drinker, so it was nice to be able to pick up 2 bottles and not have to buy a whole case.  I managed to spread one drink out over the entire evening.

We threw burgers, sausages and a packet of herby taters on the grill.

 
Chef Dean on duty! 😉  While he cooked, I prepped the sides/toppings.

My burger on a whole wheat thin with a mayo/mustard/onion mix on the bottom and tomato & lettuce on the top. Mmm mmm! BBQ rocks!!

Veggie Sides – corn on the cob and fresh farmer’s market beet greens. Double YUM!

The herby potatoes were also fresh from the farmer’s market and mixed with olive oil, garlic, chives, parm cheese & pepper.

Later on in the evening we made some coffee and the birthday cake was brought out.  Chocolaty Espresso goodness!

This morning the birthday boy opened his gifties. New wireless keyboard/mouse set from Holly!  He looks pretty happy doesn’t he? 🙂

Breakkie was scrambled eggs with tomatoes, chives, bacon bits & cheese.

Fresh baguette from the market and some berries.

Plus a few leftover taters.

 
Once our bellies were full, we packed up the car and headed to the beach!! It’s another hot, humid day here – so lucky we live close to the water.  We ended up going to a local place that has the lake on one side and the ocean on the other.  FYI – I left MariLynn home and stuck with the old point & shoot.  I wasn’t risking the water and sand. :-p

The water temperature was perfect, I dove right in….. I love swimming.  Someday we are going to live on the water!

After a good 45 mins of swimming we dried off and head to the beach for a stroll.  Unfortunately the tide was in, which meant lots of rocks. 🙁  I was wearing flimsy flip flops so I stood and took pics while the others explored.

By the time we got home I was one hungry girl!  Lunch was a salad with mixed greens, tomatoes, fresh basil & goats cheese. Topped with balsamic vinegar.

Along with a plate of tortillas, salsa & light sour cream.

It’s been a great weekend so far, ending it with a fancy dinner out at Il Mercato.  Off to get ready.
