Sizzled Citrus Shrimp

It was a humid day here in Nova Scotia, its 8:30pm and I’m still hot. YUCK.  I refused to turn the oven on tonight, stuck to the BBQ and a few minutes on the stove top.

Dinner was a tasty recipe that I got from JillianMichaels.com a few years ago.  The directions in the recipe are to grill the shrimp in a skillet.  I made a few modifications so that they could be grilled as skewers on the BBQ.

Sizzled Citrus Shrimp

Ingredients:

  • 3 tbsp lemon juice
  • 3 tbsp dry white wine
  • 2 tsp olive oil
  • 3 garlic cloves, minced
  • 1 lb shrimp
  • 1 bay leaf, crushed
  • red pepper flakes
  • fresh ground pepper

I used 1 bag of frozen, pre-cooked shrimp.  Thawed out.

 
In a large mixing bowl combine lemon juice, wine & olive oil.

Mix in garlic, bay leaf, red pepper flakes & pepper.

Add shrimp to mixture and toss to coat.  Cover and marinate in the fridge for 15 minutes.


Skewer Tip:  Soak disposable wooden skewers in water to avoid them burning on the grill. For the record they will catch on fire…don’t ask me how I know. 😉


While the shrimpies are marinating, head out to the garden to see what’s fresh for the picking…


Green & yellow beans, snowpeas and regular peas.  Mmm, fresh veggies!


Prep the skewers…

 
And place them on the BBQ rack on the lowest heat possible. See the heart? I swear I didn’t do this on purpose!

 
It was a sunny Friday night; only appropriate to crack open a bottle…

 
Banrock Station White Shiraz. – Light rose petal in colour, the Banrock Station White Shiraz displays fresh lifted strawberry fruit with floral and jasmine aromas. The semi sweet palate abounds with strawberry flavours and reveals a lovely zesty finish.


I had a few ounces, was quite refreshing.


Don’t forget about the skewers!  I rotated them every 5 mins or so, for a total of 4 times. 


Ta-da! A lovely, light summer meal.

 
Shrimp was served on a bed of creamy rice noodles.


Don’t they look delish?  They were really good!

Side of fresh beans.  Love, love, love having a garden!

I don’t really have anything else to say about the day, except that I’m glad it’s OVER.  This week was brutal.  HELLO WEEKEND!
