“Soup”er Douper Soup Recipe

The weather is cooling off and I’ve hauled out my boots and sweaters and changed over to my Fall wardrobe, resistance is futile… summer is over. But I’m ok with that… in Fall I crave routine, warmth and comfy food.

And what is more comforting on these increasingly cool Fall days than a hearty, healthy soup? So I went in search of a great recipe on chicken.ca and since I had some lentils hanging around the pantry that I wasn’t quite sure what to do with I thought I’d attempt this hearty Big Batch Chicken, Lentil, Bean & Rice Soup recipe. And I’m so glad I did!

This recipe appealed to me for a number of reasons. First being the big batch for those days when you don’t know what to pack for school lunches it’s great to have a quick, healthy leftover option that survives well in the freezer. The second reason I chose this recipe is the lentils, I could finally put them to use and know that I was adding a super healthy ingredient to the soup. Finally, it’s a really easy recipe that even I can follow. The last time I made soup it turned into a stir fry… but let’s not go there. This recipe was so much more successful!
