What you’ll need
3 Chicken boneless skinless breasts
1 red onion, chopped
1 Jalapeno, chopped
2 limes
1 Clove of Garlic, chopped
1 L container of organic Veggie Stock
1can corn
1 can black beans
1 can diced tomatoes
In a pan, fry the chicken, red onion and jalapeno until golden brown, with salt, pepper, and cayenne if you like it extra spicy. Once golden, add the clove of garlic. Add the veggie stock, corn, beans and tomatoes, stir and heat through.
Add a handful of chopped fresh cilantro just prior to serving.
