I tweet a lot on Twitter about what I eat and how I make it but I realized that this is only hitting one part of my readers, so I think I’m going to start posting my quick, easy and healthy recipes that I concoct on a regular basis. So here is my first one and expect lots more!
Egg, Tomato & Avocado Delight
What you’ll need:
1 large egg
½ Whole Wheat English Muffin
1/8 Avocado
1/8 Tomato
Salt & Pepper to taste
Cooking Instructions
Heat a frying pan and fry your egg to how you like it, I like mine over easy. (I’m now thinking poached would be FANTASTIC way to do this too). Toast your English muffin, slice your tomato into a large slice, and slice your avocado into a nice thick slice as well.
Once your English muffin is toasted to your liking, add the tomato, avocado, salt and pepper to taste and then set your egg on top of it. And voila, a fast, easy and healthy breakfast.
This morning’s new creation took me less than 10 mins and has about 200 cals, 11.5g of fat (mostly from the avocado which are “good fats”), 17g carbs, 4g of fiber and 10g of protein. Personally, I’d have two of these, but that’s just me.
