Super Easy Gluten Free Protein Pancakes

Want to surprise your loved one with a pancake feast in bed this weekend? Perfect because I have a super easy recipe for gluten free vanilla chocolate chip protein pancakes (phewf say that ten times fast), and with a doctored up pre-made mix no one needs to know they weren’t made from scratch.  Shh.. I won’t tell if you won’t.

Gluten free pancake lovers rejoice! You too can participate in Pancake Tuesday, or pancake Sunday for us! Thanks to Sobey’s Compliment’s Gluten Free Pancake Mix and/or Bulk Barn which ever you choose you really can whip this recipe up in flash. And with the addition of the protein powder and some healthy swaps you’ll stay fuller longer so you can stick to those healthy New Year’s Resolutions while indulging in your pajamas with some Netflix. 
Instead of using traditional butter, and milk we’ve swapped in unsweetened Almond Milk, and coconut oil which because they are plant based we know they are lower in saturated fats (those are the ones you want to stay away from to ensure proper heart health). We’ve also removed the refined white flour, and sugar and instead added a pre-made gluten free mix, and naturally sweet maple syrup.
Full disclosure: the pancake lover in this household likes their pancakes small and flat (which is basically the opposite of the rest of the world), so typically I add additional water to the recipe to make the batter thinner. If you like your pancakes fluffier (I feel you) simply stick to the recipe posted below, and only add water if necessary. 
Also if you’re in the market for some new bake ware goodies might I suggest these baking bowls from Trudeau Cuisine? As I mentioned above I make this recipe every Sunday, and these beautifully colored mixing bowls are seriously great. They are weighted so they don’t tip over (i.e. like when you leave the whisk in the bowl), and they also have a nice little lip on the side so you can hold the bowl with ease in one hand while your other hand does its thing like scoop batter for instance.

I’m obsessed, so I figured it was worth a share. I’m quite positive that you can get the Trudeau bowls at stores like Think Kitchen, but you can always check their website to be sure where you can find them in your area.

SUPER EASY GLUTEN FREE PROTEIN PANCAKES
Ingredients
1 cup gluten free pancake mix (available at Bulk Barn & Sobeys)
2 scoops vanilla protein powder (or whatever you have on hand)
1 cup milk (cows, almond, cashew whatever)
water (optional for thinning batter as needed)
2 TBS oil + more for cooking as needed (I use olive or coconut)
1 TSP vanilla or maple syrup (best to avoid artificial for both)
two handfuls (or so) dark chocolate chips or (blueberries)
Directions
In a large bowl combine pancakes mix, and protein powder 
Using a large liquid measuring cup (or another small bowl) combine wet ingredients: milk, maple syrup, and oil. 
Combine wet and dry ingredients together until incorporated.  
Heat grill or pan over medium heat (oil as necessary) 
Using a 1/4 cup scoop out batter onto the grill 
wait until little bubbles appear and then they are ready to flip 

Keep setting aside pancakes until the battery is completely gone. 
If you want to cook bacon, sausages etc to accompany your darlings pancakes (a) you’re an all-star and the real MVP (B) pop them into the heated oven and go about your business, and they will be ready when you are!
