Sweet & Sour Pork Stir Fry

It’s been 3 years and almost 1,000 posts.  Coming up with witty titles is getting difficult.  Now I’m just saying it like it is. 😉

Today was great!  Weighed in this morning and was up by 3.4 lbs (h20 retention I’m sure) Continued along the day and made the most of it – got in 3L of h20 and tracked every bite.  Think I’ll try to convince hubby to go for a walk this evening too. 

For Supper I needed to use up left over cooked pork loin.  Enter the Sweet & Sour Pork Stir Fry.  Doesn’t it look delish?

So easy.  Chopped red & green peppers, onions, broccoli (still working on the huge ass bag from Costco) and snow peas. Splash of Soya Sauce.  10oz of thinly sliced pork. Sweet & Sour Sauce. Cook and mix.

Spicy! 

Served over 1/2 c brown rice.   Tasty, filling & healthy.  7 points for Dinner.  Not too shabby.  Plus, there’s left over’s for lunch tomorrow!


Also wanted to share with you all my take on Kath’s oatmeal pancakes. I made these last week for breakkie and they were awesome!  So, we had them again this morning with an added chocolately twist. 🙂
 

For two large pancakes –

  • 1 cup oats
  • 1 mashed banana, divided in half
  • 1/2 tsp baking powder
  • 1/2 cup UVAB
  • 1 egg <—which I totally forgot this morning, whoopsie!
  • 5g mini chocolate chips


Topped with the remaining mashed banana and sugar free syrup.  I know, I know. Artificial sweeteners are bad but this is what I had on hand.  Was good and held me over nicely.

 
Okay, I’m off to watch the season premiere of TRUE BLOOD!!! Yay!!  Will catch up with you all later tonight.
