Whew! What a day, what a day. Just got in from a bit of hill training. This time it was with the Team Myles group and I must say, really different then what I’ve been doing. I’ve been giving it my all up steep hills that are 300-400 metres and what we did tonight was basically running up a gradual incline of maybe 200 metres.
I was pretty hungry when I got home. Hubby “waited” for me to eat. AKA waited til I got home so that I would cook for him. ;) He got an Amy’s burger while I popped a couple portabella’s in the oven. I love a good ‘shroom burger simply cooked with a drizzle of balsamic vinegar & a sprinkle of oregano. Mmmm mmm!
My burger was on a whole wheat bun with a handful of baby spinach and a good smear of light cream cheese.
Side veggie stir fry – broccoli, match stick carrots, onion, snow peas and bean sprouts with a dose of pad thai sauce thrown in at the end.
I really thought that my run tonight would be a lot longer/more strenuous so I ended up fuelling up waaaay more than necessary. Whole wheat toast & dark chocolate almond butter.
Plus, a delicious green smoothie. One of the best I’ve made ever actually. It was light, almost fluffy and really good. Strangely what made it good was the protein powder I used. I’m not usually a fan of protein powder, every single on that I’ve tried has tasted chalky and gross. But, when Prairie Naturals offered to let me chose something to review I went straight for their powders in hopes that maybe, just maybe, I’d finally find a good one. Score! I chose the Lean Whey – Strawberry Raspberry Cream and it’s FANTASTIC. They sent a huge container, which I don’t think will last very long. Full review to come. (And maybe something for one of you lucky readers too.)
Rewinding now, to my work day. Mid-morning I took a little snack break and finished off the homemade hummus. Hubby was a huge fan so no doubt I’ll be making another batch on the weekend.
Lunch was a salad – spinach, mixed field greens, carrots & strawberries topped with a balsamic/maple syrup drizzle. Deeelish!
And a bowl of the left over tomato pesto pasta.
Another successful day as a vegetarian. There wasn’t much “me” time unless you count the hill training. I’m sorta inclined to count it. 😉
