At Home Edamame & Miso Soup

One of my favourite comfort soups is Miso!  There’s something so soooooothing about the broth and I couldn’t get off my brain a while ago, so I decided to give this a try that I found at the grocery store (stays refrigerated):IMG_7515It was easy peasy and comes with three separate servings.  You just add the contents to the bowl and add hot water and voila:

Served up with some steamed edamame with sea salt was the perfect and balanced lunch:

 

The only “con” to any packaged soup is the sodium content.  It was a “little” high, but I’m not sure if that would be the case with any miso soup with soybean paste?  I should look into that.

Speaking of Miso soup, I’m thinking that some Halifax girls should get together for a Doraku GTG.  I would love love love their sweet potato rolls and they make the BEST Miso soup too 🙂
