Better For You Eggnog Latte

healthy recipes, starbucks, vegan

Synonymous with the holidays eggnog is a must; pair it with some coffee or espresso? I mean, it’s next level amazing. Who doesn’t love a good eggnog latte? Starbucks certainly experienced an outcry large enough for them to bring it back recently for the holiday season, but your waistline might have different feelings.
At an average of 460 calories and 21 grams of fat you might find yourself on the hunt for a better for you recipe. And of course I’ve got it! And guess what it’s vegan.

If you’re trying to stay away from dairy don’t worry you don’t have to miss out on the eggnog love! There’s a plethora of eggnog knock offs that you should be good to go! I used Noel Nog which is made with almonds, and because I find the sugar content a little high I do a half and half of Noel Nog and unsweetened or original Almond Milk. At 3.5 grams of fat per cup (which you don’t even come close to) it cuts down on the calories and fat quite substainally without sacrificing flavor.
I don’t add extra sugar to my Eggnog Latte, but you totally could add something like Stevia or coconut sugar for a calorie free (and better for you) sweetener option.
BETTER FOR YOU EGGNOG LATTE

INGREDIENTS
1/4 cup almond milk
1/4 cup eggnog (or noel nog)
½ cup prepared unflavored coffee at double concentration (or 2 shots espresso)
pinch of ground nutmeg (for topping, optional)
Sweetener of choice (if adding)

DIRECTIONS
To Prepare The Steamed Milk:
You can either froth your milk, in a mason jar (with tight lid) and shake it until your hearts content or you can use a frother or immersion blender.
Pour the milk, eggnog and sweetener (if adding) into a microwave-safe jar or cup (I just use a mug and retrieved it with a dish cloth).
Frothier method: microwave (30-45 seconds) and use frothier or immersion blender to froth. I used my little hand held battery operated frothier which works amazing by the way, and takes like two seconds to froth!
Mason jar method: shake/mix the milk mixture vigorously for 30-45 seconds. Stop when the mixture appears to have doubled in volume from the air bubbles. Remove the cover, if applicable, and place the mixture into the microwave. Heat on high for 30-45 seconds, or until the mixture starts to bubble up almost to the top of the jar. Take care not to let the milk mixture overflow the jar or to bubble too much and then fall flat. Repeat these two steps (shaking and then heating) a second time until the milk mixture is super frothy.
To Prepare The Latte:
Pour the hot prepared coffee (or espresso) into a large mug.

Using a spoon hold back the foam (you’ve seen your local barista do this) carefully pour the almond milk and noel nog milk mixture into the coffee. Don’t stir!
Gently spoon out the foam and place over the top.
Sprinkle with some freshly grated (or ground) nutmeg.  And that’s it! Hope you enjoy! If you give it go let me know how it turns out.

Hope you are snug a pug in a rug with your favorite hot drink of choice and watching Christmas movies with your loved ones 🙂 Happy Holidays Blog Reader!
