Bringing Balance: Pumpkin Spelt Muffins

If you are looking for a great treat for the lunchbox around Halloween, these are perfect. The chocolate chips make them seem a lot more decadent than they actually are, and goblins and ghouls off all ages will gobble them up.

2 c. spelt flour
2 tsp. baking soda
1/2 tsp. aluminum-free baking powder
1/2 tsp. salt
1 tbsp. pumpkin pie spice
1/3 c. dark chocolate chips
1/4 c. raw pumpkin seeds
2 large eggs, beaten
1/4 c. unsweetened applesauce
1 tsp. vanilla
3/4 c. sugar
1.5 c. pumpkin puree

To prepare:  Preheat oven to 350F.  Line 12 muffin cups. In a large bowl, combine flour, baking soda, baking powder, salt, pumpkin pie spice, chocolate
chips and pumpkin seeds. In a medium bowl, whisk together eggs, applesauce, vanilla, sugar, and pumpkin. Add wet to dry, stirring until just combined.
Divide mixture amongst 12 muffin cups, and bake for 27-30 minutes.
