Bringing Balance: Strawberry Banana Nice Cream

Writing this in the rain, dreaming of the next hot summer evening I can whip this up after a late-night al fresco dinner, because this uber-healthy frozen treat is SO GOOD.

And it’s sugar and dairy-free, hence the name. 

Cut up your ripe bananas before they brown and throw them in the freezer in a container. If you have pre-frozen bananas, you can whip this up in 5 minutes. The kids and the thirteen year-old babysitter all agreed this was the bomb.

Ingredients:
2 bananas, cut into chunks and frozen
1 cup frozen strawberries
1/2 c. coconut or almond milk
1/2 tsp pure vanilla extract
1/4 tsp cinnamon (optional, I prefer it without, my son prefers it with)

To make:
Combine all ingredients in a food processor or good quality blender and process until smooth. If your bananas are really hard when you pull them out of the freezer, you might want to blend them alone to break them up before adding the other ingredients. Serve immediately or pop in freezer until you are ready to eat.It will need to soften it at room temperature for a few minutes if you re-freeze it.
