When I crawled out of bed this morning and wandered downstairs for a cup of coffee I realized I forgot that I had put breakfast on before I went to bed. Instant smile on my face. I love easy breakfasts.  Plus you get the bonus of waking up to a house filled with the scent of warm cinnamon!

easy, healthy breakfast for busy moms | overnight crockpot oatmeal

See that shiny thing in the background? It does all the work for you.

Overnight Crockpot Oatmeal:

1 cup steel cut oats {we buy ours in bulk at Costco}
2 cups water
2 1/2 cups milk {I use whole milk…guilty pleasure}
1 tsp cinnamon

Dump everything into your crockpot, give it a stir and set it to “low” for 6-9 hours. Mine comes out perfectly at about 6-7 hours {stays on warm for the rest of the night/morning}.

Serve topped with anything you like! We love chopped apples, a handful of walnuts, brown sugar and a little bit of milk  🙂  If you like raisins in your oatmeal, add them in the crockpot so they’re juicy and plumped up by the morning! Serves 4-6 but we get about 8 servings since I have tiny ones in the house.
