Fine Dining At Home

Yesterday afternoon I made a quick trip to Superstore for a few things.  We needed soap, something for Supper and I wanted to stock up on more Supercrack and the crackers hubby likes with hummus.

I had no idea what to make for Dinner until I saw these in the freezer section – Sweet Pumpkin Mezzaluna.

Enjoy a fine dining experience at home in minutes with this delectable stuffed pasta. The smooth, luxurious filling is made with fresh, sweet Violina pumpkin purée and crumbled amaretti biscuits, tucket inside delicate egg-pasta pillows.

They were really easy to make, boil for 4-5 mins and then toss in olive oil & parmesan cheese.  Approximately 400 calories per 1/2 the box.

Served with a side of maple balsamic roasted brussel sprouts.

What a decadent meal!  It was so rich and filling.  I’m usually a clean- your-plate type of gal but I could only handle about half of the pasta. Delish!!  I was really impressed with the quality of this “frozen food”.

Later in the evening I got stressed about something and blew my good day all to hell though. :(  I’m coming clean, will track the points and make today the best it can be. 

After 2 straight weeks of following a vegetarian diet I must admit that I’m wondering what other meals I can make.   Any ideas?  Yesterday I saw people selling lobster on the side of the road for $5.25/lb and I almost stopped. I LOVE lobster and it’s so cheap this time of year.

I have been a bad blogger this week and have major catching up to do with all of you.  Sorry girls, I’ve been busy and trying to squeeze my blogging in before work but no time for comments.
