Healthy Delicious “Hummo de Gallo”

If you’re a fan of salsa and a fan of hummus, I think you’ll enjoy the combination that I’ve come to love and have become staples for me of late. 

My favourite hummus is Sabra, but the stuff is a bit like crack and the calories can add up pretty

quickly if you’re not careful.  It’s so creamy and delicious! I enjoy the Roasted Red Pepper flavour quite a bit and have a Costco size of it in my fridge, so you can imagine how tempting it can be to dip into it and 2 tablespoons doesn’t really go very far in all it’s deliciousness!

So what is a girl to do? Adding veggies is a no brainer to bulk something up without taking a hit in the calorie department.  I used to enjoy making my own salsa because it’s freshness is unmatched coming out of any jar that I’ve ever found.  UNTIL I came across Penny’s Salsa Pico de Gallo at Costco. It’s always a risk trying something new at Costco because you always end up with a large amount of it!

But as you can see, it’s almost gone! LOVE IT! I won’t be buying any more jarred salsa after finding this, that’s for sure. It’s extremely fresh tasting and all of the veggies in it do not all blend together like most salsas. It’s chunky and delicious! So I decided to add a few very low calorie scoops of this salsa along side only one serving of the hummus and it makes an absolutely delicious snack.  Scooped up with 23g of Baked Tostidos Scoops for a total of 200 cals:

And I didn’t stop there, nope.

I enjoyed this flavour combination so much that I decided to make it into a pizza. And I have another favourite little grocery staple to share with you in that department.

Hello PC Blue Menu Multigrain Thin Pizza Crust!

This is a pre-baked pizza crust and is only 150 calories for 1/4 of the pie. This makes for an excellent substitution to a traditional crust and you can top it however you wish! What also great about it is that you can cut it before you make your pizza and only make “pieces” of pizza at a time if you like!

Enter Chicken “Hummo de Gallo” Pizza:

1/4 Pizza = 480 calories

  • 1/4 PC Blue Menu Multigrain Thin Pizza Crust
  • 2 tbsp Sabra Roasted Red Pepper Hummus (the "pizza sauce")
  • 100g oven roasted chicken breast (this covered the entire portion)
  • 2-3 tbsp Penny’s Pica de Gallo Salsa
  • 30g Kraft 4 Cheese Italiano Light Shredded Cheese

You could add whatever veggies or other toppings you choose, of course. Other similar variations might be replacing the salsa & shredded cheese with light feta, sliced olives and red onions. I think I might try that one soon!
