Holy Guacamole!!

Supper tonight was delish!  We had lots of leftover chicken (from that huge 10lb beast) that needed to be used up ASAP and the avocados were calling my name from the fridge soooooo…

Mexican-style tortillas it was! Stuffed with salsa chicken, guacamole, old cheddar, spinach & green onions. Mmm mmm!

I cheated a bit in the guac dept. and used my fav guacamole spice mix that I picked up last night during the grocery excursion.

Perfection.  And you know, full of all kinds of healthy fats. 😉

The tortillas were pretty simple.  Warmed the diced chicken with a bit of salsa and prepped the rest of the filling.

Spread the tortilla w/ the guac, then the spinach, chicken, cheese & onions.

Roll it up, insert tooth picks and slice them on a diagonal to look all purdy! 🙂

I did have the new Liberte Greek Yogourt for breakie this morning.  But unfortunately I’m still learning how to use this camera so pics aren’t the best.

Let me just say though, O.M.G!!!

I had one serving, which boosts an amazing 20g of protein and is SO thick and creamy; better than I imagined.  It has the consistency of full-fat sour cream,  if I had to pick something to compare it to.

Topped it with 1/2 serving of Blue Menu Granola, 1/4 cup organic blueberries, 1/2 tbsp sliced almonds & a spinkle of chia seeds.

Boo, see how blurry the pics are? Well, turns out I had the camera on the wrong settings. Apparently all I had to do was read the manual. 😉

This breakfast held me over longer than my regular oats.  Until recently, I never really knew just how important protein was in helping to keep your body satisfied and fuelled.   I’ve really been upping my protein lately and I can feel the difference when I’m not getting enough. IE: I’m hungry way too soon after a meal.

So, as you can see I had a pretty stellar day food-wise.  Work-wise it went well too, super busy and I’ve brought some home with me too.  This weekend is shaping up to be quite a busy one but it’s looking like loads of fun!

– Errands & lunch
– 2 hour yoga class at 108Yoga – early afternoon. More deets on this to come soon!
– Pick up new computer
– ♥ Valentine’s Day dinner prepared by hubby ♥

And Sunday is our lunch G2G at the Wooden Monkey!!   Plus, you know the usual cooking, cleaning etc. 😉
