1 can chickpeas or 1.5 cups cooked chickpeas, well rinsed
1/4 cup water
juice of one lemon
1 clove garlic
1/3 to 1/2 cup tahini
1 tsp salt
Cumin to taste (I like cumin, leave it out if you don’t)
Combine in food processor and blend until smooth. Can also be frozen in an ice cube tray, so that you just take a cube to work or (or school) in a small container and it will be defrosted by lunch time. Perfect portion size to eat with veggies or pita, or as a spread in a whole-grain veggie sandwich!
