I’m Hungry: Mandarin Orange Salad

A classic go-to summer salad recipe that's been passed around my family for years. It's always met with rave reviews from both young and old. How could it not with apples, oranges and almonds in it?

Dressing:

1/4 cup apple juice

4-6 tbsp olive oil

3/4 tbsp sugar

1 clove garlic, minced

2 tbsp vinegar

salt, pepper and parsley to taste

 

Salad:

Romain Lettuce

Spinach

1/2 Spanish onion, sliced

1 cup mushrooms, sliced

1 can mandarin oranges, drained

3/4 cup diced apple

1/2 cup slivered almonds, toasted

 

Directions:

1. Comine all dressing ingredients in a covered jar or bowl and shake/whisk to combine.

2. Let dressing chill before serving

3. Comine salad ingredients and toss with dressing. Serve immediately.
