It’s A Beautiful Day

As I’m preparing this post the sun is streaming through the living room windows .  That’s two days in a row!  Love the warmth and color that it brings to the room and the way it lifts my spirits.  The running schedule tells me 3K for today.  I’ll take that and possibly more.  I want to take advantage of this gorgeous weather especially since it’s supposed to be +7 degrees!!!

Hubby won’t be home for Supper tonight so I took the opportunity to make a big meal for breakie instead.  Inspired by Jaime’s hash, I came up with my own version.

In a large non-stick frying pan cook 2 small diced potatoes and 1/2 an onion.  Add seasonings of your choice.  My usual go tos -  pepper, garlic powder and crushed red pepper flakes.

Add about 1 cup of diced ham to the mix.  I don’t usually have ham on hand. Ha Ha try saying that one ten times fast! but after our meal last weekend we had a big bag in the freezer.

Cook until everything is crispy and dare I say, a bit greasy. 😉 Sprinkle with a bit of shredded old cheddar and let melt.

Sprinkle with fresh chives and then top with an egg – sunny side up.  The natural sunlight makes the pics so much better.

Side organic cara cara orange.  I remember the first time I ever had a cara cara.  I bought them by mistake and had no idea until I peeled it and the color was so different compared to regular oranges.  Almost grapefruit like.

This weekend has been wonderful so far.  We spent a few hours cleaning yesterday afternoon – I got the kitchen done;  the fridge/freezer is all scrubbed out, did it ever need it.  Still gotta tackle the bathroom + linens today.  

I was so impressed by the weather that I fired up the BBQ last night.  Sorry no pics but we had a total “hubby meal” steaks with baked fries & roasted brussel sprouts. (Okay the brussel sprouts were my idea!)  But yes, I said the magic words BARBEQUE!!!!  A new season is on it’s way!

We decided to wrap up the evening with a movie – Paranormal Activity.  I wasn’t impressed at all.  I kept hearing how scary it was but umm….???  Lame.

I did tackle one more thing last night and that was finally getting my cross border food exchange all packaged up and ready to be shipped off to Janna. I had so much fun doing this and find it so weird that you can’t buy ketchup chips in the States and you know, Smarties are chocolate here in Canada. 🙂

Momma is such a snot but so photogenic. She seems to enjoy posing for these shots even though she tries to make you believe otherwise. And yes, she is up on the couch.  We haven’t ever tried to stop them. Opps. 😉
