Was another hectic day at the office but I managed to get out on time. Yah!! Hubby is off for the week so we headed right into the gym; feels like it’s been forever since I last worked out inside. We met up with my Mom there and I spent a good half an hour showing her how to use the circuit weight machines. I got in my planned short 3K on the dreadmil. Man I hate running inside. A little over 3K in 21 mins and cooled down with a brisk walk.
Dinner was meant to be one of convenience tonight. Perfect, since I’ve been wanting to try out this little package of cheesy goodness – Annie’s Natural Shells & Real Aged Cheddar.
Figured it was about time I jumped on the band wagon since everyone else has raved about this product. It’s funny because as I was cooking all I could think was wow, it’s been a long time since I made Kraft Dinner. 🙂 However, this mac n’ cheese isn’t quite like KD. It’s all natural – See below:
Annie’s Cheddar Mac (as we call it!) is our answer to all those chemically orange colored cheeses out there. We’ve taken our original Shells & White Cheddar and added a little color to it, naturally! Our totally natural cheese is colored with a plant extract called annatto. Annatto has been used in tropical American cultures for generations to color foods such as butter, cheese and mustard. The annatto tree grows 20 to 30 feet in height and when its seeds are stirred in water, they produce orange annatto dye, also called achiote, to color foods.
Some of you may have seen me tweeting earlier that I was craving diet pepsi. So weird. We had to stop for milk so I may have asked hubby to pick me up a little treat. Served the way it should be – in a tall beer mug with lots of ice!
Back to the Mac…. it turned out to be really good. The perfect amount of creamy and cheesy!
Bulked up with my fav little green trees. 🙂 You know, I can’t think of a green veggie that I don’t like. Broccoli & cheese is one of the best combos ever!
This rest of my week is shaping up to be pretty active and I’m excited!

Friday – yoga
Saturday – 16K group run
I’m thinking ahead to the weekend though and am not making any other plans except for the LSD on Saturday morning. The house needs my attention in a major way. Plus, I’m craving homemade rolls so some baking will be happening.
