No Bake Coconut Bars

I have a confession to make. When I was making these I may or may not have taste tested the “batter”, and then I decided I was going to triple the recipe.

I knew that one cup of coconut was not going to be enough.

So if you’ve got 10 minutes you’ve got enough time to make these coconut bars! With no baking required you can whip these up on a moments notice, and with such few ingredients you probably already have these on hand so you can get right to it.

Thanks to a lovely friend, and Short Presents reader this recipe is now in my possession, and I fear that my other recipes are going to be major jealous. NO BAKE COCONUT BARS 
If you’re a coconut lover you might as well go ahead and triple the recipe. You won’t be disappointed.

Ingredients
1 cup (or 3) shredded coconut (unsweetened)
1/4 cup agave or pure maple syrup
2 tbsp virgin coconut oil
1/2 tsp pure vanilla extract ( I used a package of stevia instead and added 1/2 tsp of water).
1/8 tsp salt
Directions  

Combine all ingredients in a food processor. (You can mix by hand if you don’t have a food processor, but just make sure to evenly disperse the coconut oil evenly so they stick together).


Squish the mixture into any small container, and refrigerate for an hour before trying to cut. (Or freeze for 15 minutes).


And that’s it! Seriously easy :):) You can TOTALLY do this.
*These coconut bars can be stored in the fridge or freezer, for at least a few weeks.
