No Bake Peanut Butter Energy Bites

Always hit a slump at 3pm? No problem! These little energy bites make the perfect afternoon pick me up.
And bonus they are made with the wholesome goodness of raw oats, and the natural sweetness of pure maple syrup and honey while the addition of chia seeds, and coconut add a nice little texture.  Did I mention you don’t even need to turn on the oven?

NO BAKE PEANUT BUTTER ENERGY BITES

As I get closer and closer to my trip to Mexico I have become more and more aware of the things I am putting my body. I’m not getting crazy with it or anything (ha like I could), but I want to be mindful that I’m putting good things in, so I feel my best.

I swapped out the flax for chia seeds (mostly because that’s what I had on hand), but also because Chia seeds are a great source of omega 3s (which is great for your skin and we can all use a little more TLC for our skin around this time of year).

NO BAKE PEANUT BUTTER ENERGY BITES
Ingredients
  
1/2 cup creamy peanut butter
1/3 cup honey
1 tsp vanilla extract
1 cup old-fashioned oats (raw)
2/3 cup sweetened shredded coconut, toasted and cooled
1 TBS chia seeds 
6 Tbsp chocolate chips  
Directions
In a mixing bowl, stir together peanut butter, honey and vanilla extract.  I find a fork or a whisk to work the best for combining these ingredients.
Add remaining ingredients and stir until evenly coated. 
Transfer mixture to refrigerator or freezer to chill (about 15-20 mins).
Once the mixture has come together slightly shape your energy bites with damp hands. I used a tablespoon to scoop out the mixture and then my damp hands to shape the top and gently plop it out. Much like when I am making sushi I had a small bowl of cold water handy (bad pun).
Store in refrigerator in an airtight container.
