Paleo Slow Cooker Coconut Curry Chicken

Ingredients

1 package boneless skinless chicken thighs
1 can coconut milk
3 TBS curry powder
1 TBS paprika powder
1 TBS garlic powder
1 TBS black pepper
1/2 TBS sea salt

4-6 carrots
1 zucchini
1 green pepper
1 red pepper

Directions

  1. In a small bowl mix all dry ingredients together
  2. Place chicken thighs in the slow cooker and pour the dry mixture over the chicken thighs and toss until the thighs are coated with the spices
  3. Pour the coconut milk over the chicken
  4. Cut up vegetables into strips or chunks and layer over the chicken thighs
  5. Cover and cook on low for 7-8 hours
