Real Men Eat Quiche

My hubby devoured this and it was allll veggie!  My quiche plan turned out fabulously if I do say so myself.

I cheated a little by using a pre-made crust.

 
Filled the pan with loads of veggies – broccoli, bell peppers, red onion, cherry tomatoes & green onions.   The egg mixture consisted of 2 eggs, 4 egg whites, 1/2c 1% milk, garlic powder, fresh ground pepper & Blue Menu Sun-dried Tomato & Herb Seasoning.  Along with two layers of reduced fat 4 blend Italian cheese.  I actually doubled the ingredients and made 2 pies/pans(?) so we’d have extra for our lunches.

 
One quarter of the quiche worked out to 8 points. (Approx 400 calories.)  So good, wish I could have indulged in a few more bites but after last night I’m staying strict to my points budget. 😉

 
Served with my fav salad of late – baby spinach, mixed field green, carrots & strawberries, drizzed with balsamic vinegar.

I tried to start off my day feeling good.   Wearing heels always make me feel all important, hehe,  so I sported these hot looking thangs today!  This is a total “me” thing and I’m counting it as that!  😉

Here’s the rest of my eats: 
Morning snack was 1/2 banana with a smear of dark almond butter wrapped in a whole wheat tortilla.

 
Lunch was another bella burger on a whole wheat bun with cream cheese & spinach.  Mmm.  Sorry to say, but my lunches are usually always leftovers so you’re gonna see lots of repeats.

With greek yogurt and blueberries for dessert.

 
As you can see, I’ve done well food-wise, staying within my points and eating balanced meals.   I’m really glad that I didn’t let that little apple turnover get the best of me. 😉 Need to get a few more cups of h20 in before bed though.   And perhaps some QT w/ the elliptical. How has your day been?

I’m getting really excited for the long weekend.  Lots to look forward to including a 14K LSD, a painting party and more!   I’m thinking our big dinner is going to be a veggie lasagna.  Do you have any fun plans for the weekend?
