When you are tight on time and you just can’t get it together to create a gourmet meal here’s a very quick side dish that can easily be thrown together with a store bought salad and a pre-cooked chicken for a no fuss no stress mid-week dinner!

Shortcut Recipes: Pasta In A Pinch

Ingredients: 1-1.5 TBS Olive oil
2 Cups (you could add more if needed) No Yolks Egg Noodles
2 TBS Parmesean cheese (more for topping)
1/4 Cup (about a handful) Mozzarella cheese (shredded)
Cracked Pepper (or Club House Spicy Pepper Medley) to taste Optional additions:
Black olives
Mushrooms
capersDirections:Cook noodles according to package (bring water to a boil, add noodles, cook 11 minutes). Pasta cooking tip: do you ever find that your water runs over? while the pasta is cooking try putting a wooden spoon across the top of the pot, and it helps to prevent the water from bubbling over. Once noodles are done, drain in a collander and put them back into your empty pot. Toss with olive first trying to coat most of the noodles then add the cheeses and pepper!
Serve immediately and sprinkle with some extra parmesean cheese. We usually have this dinner when we both have had a busy day and no one feels like cooking, but we don’t want to spend a fortune eating out. You could always sub in Salmon for the chicken and throw it into the oven with Greek feta and oregano salad dressing on top for 20-25 minutes if you don’t want to purchase the pre-cooked chicken.
