Zesty Mexican Eggs, Ariba!

Tired of your same ‘ol scrambled eggs?  I love eggs for breakfast, but they can get boring fast.  Here’s a quick little something to add to your eggs to give them some personality:

What you need:

4 large eggs (or how ever many eggs you eat for breakfast)
4 tbs of salsa
3 oz Franks Red Hot Sauce
Fresh ground Pepper to taste

In a large bowl, mix eggs, salsa, Franks and pepper.  With an egg beater (whisk) beat the ingredients until well mixed.  In a heated frying pan, add your mixture and scramble your eggs to desired consistancy.

And voila, Zesty Mexican Eggs.  One serving has about 350 cals, 27.3g of fat, 9.5g of carbs, 1g of fiber, 6g of sugar and 22g of protein.  Partner it up with some fresh fruit or a piece of whole wheat toast or toasted whole wheat English muffin for a full meal.
