Time To Relax

After a hectic day at work I am now relaxing for the evening and catching up on almost a full week’s worth of Days Of Our Lives.   Hubby is out at a work function this evening so it’s just me for dinner, which was an omelette w/ swiss cheese & spinach on an ezekiel tortilla. Easy and delicious.  

Ahhh the weekend is here.  It’s looking to be quite a fun one – tomorrow morning I have my first group run with Team Myles at Point Pleasant Park and then I’m meeting Ang, Jaime & Tash for coffee and we’re all heading over to OptiMYz Live, which is a big health/fitness expo being held downtown.  I’m really excited to check out all vendors and attend a speech on Eating Local & Organic by the owner of the Wooden Monkey.   Plus, I’m going to try and squeeze in a little visit to Bishop’s Cellar to use up a surprise gift card that I received today.   I’ll be sure to report back all the deets!

Thought it would be fun to share a yummy meal we had the other night.  I’m a huge fan of stir fry, they are healthy, filling and tasty.  Last night we had Thai Red Curry Chicken.

To save time I picked up pre-chopped carrots, pre-washed snow peas and bean sprouts.  Hubby quickly sliced up an onion and mixed bell peppers.  Throw them all into a big frying pan and let cook….

Meanwhile, I de-boned the two chicken breasts and cut into small pieces, cooking in a separate pan.

Once cooked, mix into the veggies and stir in 1 cup of the red curry sauce.  I love “cheating” with sauces.  They always taste fabulous and you can generally find
low calories ones.  This sauce, Sharwood’s Thai Red Curry, was 60 calories for 1/4 cup.

Served with my fav PC Thai Rice Stick Noodles.  This dish (including the noodles) made 4 servings at 490/calories each.

This made awesome left over’s for my lunch today. 🙂

So, like I said relaxing for the evening – boob tube, laundry, blogs & tea.
